Pumpkin season has arrived in the Hippy household, and I am already dreaming up all the pumpkin recipes that I want to come up with for you guys! I can’t deny my pumpkin-love every fall. I like to indulge in pumpkin everything….except maybe those pumpkin Oreos. During the fall season, I am a glutton for pumpkin pie any time of day. I don’t care that it’s a dessert, it makes the best breakfast, but sometimes I am in a hurry and don’t have time to make a pie. It’s getting hot out here in TX!!! Every evening after I put the kiddo down to bed, I start craving something sweet, but I have been hard-pressed to actually make any desserts because I just can’t bear to heat up the house. This is the time of year that I start whipping up my no-bake desserts to avoid using any heat. Summertime is one of my favorite times to eat all sorts of lemony treats, and lemon bars are my absolute favorite cool treat. Since it IS summertime, I also love to use coconut in pretty much everything, giving them a tropical feel. I figured this recipe needed a little tropical inspiration too! It also helps you to get your daily dose of coconut oil! If that isn’t reason enough to scarf the whole pan, I don’t know what is!

Summertime has been a blast here at the Hippy home, as we have spent a TON of time adventuring outdoors, swimming to our hearts content, and of course consuming our summer favorites. Our very first family backpacking trip was a HUGE success! We had so much fun (more on that in the next post!) that we are already planning our next trip (I’m thinking Zion). On our trip, our homemade dehydrated meals definitely stood out and made a huge difference on how awesome our trip was! I had spent the last couple months dehydrating all of the fruits, veggies, and proteins that we needed for this trip so that we’d eat healthy whole foods meals without all the icky additives. I understand the plight of the mom who has to sneak their kid’s nutrition in every single bite. My child is a picky eater. A VERY picky eater. It’s not for a lack of trying either! This kid has had the best of the best! As an infant, he ate nothing but my homemade organic baby food and loved every single thing I put into his mouth.
