Make Your Own Organic Coconut Milk With Only TWO Ingredients

I really love to drink and use coconut milk. It's super healthy, it smells and tastes delightful, and frankly it's by far my favorite non-dairy milk beverage. I have tried all of the different brands and enjoy a wide array of different coconut milks. What I really wanted to taste, is fresh homemade coconut milk. I just knew it had to be better than the store bought coconut milk (isn't everything always better homemade???). Continue reading “Make Your Own Organic Coconut Milk With Only TWO Ingredients”

Homemade Hippy Honey Wheat Bread (and why you should be paying attention to the ingredients in the bread that you buy)

About six months back, I said to the Hippy Husband, “I need to start making bread by hand because I bet you $10 there are absolutely no nutrients in the over processed sliced bread that we have bought from the grocery store our whole lives.” Continue reading “Homemade Hippy Honey Wheat Bread (and why you should be paying attention to the ingredients in the bread that you buy)”

Vegan Applesauce Spice Cupcakes With Maple Cinnamon Icing

I have a love for apples in deserts. There is no other fruit out there (except maybe coconut) that I find myself wanting in my pies, cakes, and cobblers (also my peanut butter!). Applesauce spice cake is especially good to me because it's so moist, it's like eating a decadent pound cake…without all the pounds! Using apple cider vinegar in this recipe helps bring out even more of the apple flavor, but make sure that it is unfiltered and organic! Vegan Coconut Ginger Pho Soup for the Soul

For those of you readers that follow me on Facebook, you know that my family and I have been sick for the last week. Tonight, I was finally feeling up to making something for us for dinner and all that I could think about was that I wanted some Pho. Before I went vegan, whenever I was sick, Pho was my go to soup since I am not a fan of most other really brothy soups. Continue reading “Vegan Coconut Ginger Pho Soup for the Soul”

Sweet Potato, Lentil, and Kale Soup for the Manliest of Bearded Lumberjacks…and everyone else too

I used to think that I didn't like soup. I believed, that soup was just this bland watered down stomach filler, that usually made me hungrier than every just an hour or two after eating it. Now, a year and a half into a vegetarian life-style and I have discovered my love for fragrant flavor bursting soups that are so hearty, even a manly bearded lumberjack would go home with a full stomach.  Continue reading “Sweet Potato, Lentil, and Kale Soup for the Manliest of Bearded Lumberjacks…and everyone else too”

The Hippy Juicing Cleanse – 3 days of detox

The Hippy Husband and I have been trying a lot of things to bring more nutrients and health into our lives and to help him lose some of the beer belly he has acquired over the years. After watching the documentary Fat, Sick, And Nearly Dead, both Andy and I were convinced more than ever that we needed to put our health at the forefront of our lives. We thought that a juice fast would be the perfect way for us to be able to cleanse our bodies of all of the toxins that we have built up, and maybe slim down a little just before spring comes around. Black Bean and Barley Salad With Cilantro Lime Dressing

Welcome to the Festival of Food Carnival. In celebration of the New Year and Healthy Starts, we're sharing recipe ideas for healthy, nourishing recipes or anything you would enjoy this time of year. Hosted by Diary of a First Child and Hybrid Rasta Mama, you're welcome to join us next time, or if you have a previously published recipe you'd like to share, add it to the linky below.

I am a HUGE fan of barley. When I was a kid, I always remember my favorite part of Campbell's Vegetable Beef Soup, was the barley that was in it. My mom never cooked with barley, so for me it was like a rare treat when I ate it in the soup. Nowadays,  I wouldn't be caught dead eating a bowl of Campbell's soup (my own homemade versions are ALWAYS better), but I love barley so much, I am always trying to invent new ways to cook with it.
