Sassy Southwest Black Bean Salad

In the heat of the summer, I love a good cold bean salad. They're hardy, yet they don't make your body have to heat up too much digesting them. There are so many different combinations that you can do with bean salads too. This bean salad calls for taco seasoning, but you can also forgo that and use a balsamic vinegar and Italian seasons. You can try out a different taste and use a sesame dressing with this, though I do love a good pasta salad with sesame dressing. The best part about this salad is that anything you don't like, you can take out or substitute. Just about any crunchy vegetable combination works with black beans. This is my southwest version of black bean salad, and probably the most common you'll find out there.

Brussels Sprouts That a Hater Loved

I must admit, I always thought that I hated brussels sprouts because I grew being told that I did. Thanks, Mom! It wasn't until I joined a local farm share and received them in my weekly share, that I discovered I am actually a lover of Brussels sprouts! After roasting them in the oven, I ended up hogging the whole pan to myself. The delicious carmelized outside has got to be my favorite part!

Two Really Great Veggie Burgers For The 4th of July Grill

The 4th of July is almost here and all that I can think of are burgers! I am a HUGE fan of grilling, even if it's for vegetables. Yeah, you heard me right. I LOVE TO GRILL VEGETABLES. It is NOT blasphemous, so you should quit thinking that immediately. I was a griller before I went vegetarian and I still make some of my best meals on it now as a vegetarian! Grilling things adds a whole new genre of flavor to your food. That's all there is to it.

EASILY Make Your Own Non-Toxic Finger Paints At Home

After buying a whole array of finger paints from Hobby Lobby, for Silas, and setting them all up, I realized there was this stench coming from them. It was a terrible chemical smell! The bottles say non-toxic but they most certainly don't smell like they're non-toxic. This situation made me realize that I could just make my own here at home. The best part is, I know what's in them.

Vegan Black Bean Chili with Quinoa

Chili is a family favorite around here. When I make chili, I have to make it in big batches because everyone wants to eat all of the leftovers before I can vacuum pack it and put it in the freezer for another day! Chili is traditionally a meaty dish, but I have learned that you can bring that big Texas chili flavor even with a vegan chili! While I have made plenty of batches of bean chili and love them, there is something to the texture that quinoa brings to a veggie based chili! It gives the chili that ground beef texture while adding protein and vitamins to the dish!

DIY Upholstery & Carpet Cleaner That’s WAY Better Than Resolve!

I have five animals, a son, and a boyfriend. If that doesn't evoke images of the messes I have to clean up, I don't know what would! I spend a lot of time testing out my ideas for a green clean home and I came up with this magical upholstery and carpet cleaner as a happy accident while trying out different ways to make a great all-purpose cleaner, without the vinegar smell. It turned out, not only was this a great all-purpose cleaner, but it also magically removed stains from my ugly white dining room chair, better than Resolve!

LENTIL LOAF…the better than meatloaf loaf

I am really big on comfort foods, and one of those comfort foods that my mother used to make me as a child, was meatloaf. I always loved meatloaf for what it is; a way to stuff all of your vegetables into a dish and hardly taste any of them! My grandmother (RIP) used to get my Uncle Matthew to eat his veggies (as he absolutely despised anything resembling a vegetable) by making dishes like meatloaf and stuffing them full of veggies that you couldn't taste within the dish. Over the years, I have learned that my Grandmother knew what she was doing! With my son Syfy, I find myself following in my Grandmother's footsteps, and lentil loaf is a great veggie sneaker!
